Field Peas from John's Farm

Organic field peas, Fairview's Best, from John's Farm. Field peas are the most varied legumes. Field peas are cowpeas, so named because they were grown as a rotational crop in the fields instead of in kitchen gardens. This mixture contains black-eyes, red rippers, victors, and chinese reds; all grown on our farm. Package includes two recipes (our family's favorites): field pea soup and field pea caviar. The flavor and texture of these little marvels range from delicate and vegetal to earthy and meaty. Sort and wash as peas come straight from the harvest field.
