John’s Farm Instapot Fajitas

2 lbs. John’s Farm Fajita Meat                    ¼ C pineapple juice

2 T lime juice                                                   1 T olive oil

1 T soy sauce                                                   1 T minced garlic

½ t chili powder                                              1 t cumin

½ t smoked paprika                                       ½ - ¾ red bell pepper sliced

½ - ¾ green bell pepper sliced                    1 medium onion sliced

cayenne pepper to taste (small amt) 1 t sugar

1 bunch green onion diced, sour cream, shredded cheese, cilantro (optional)

Combine dry ingredients (garlic, chili powder, cumin, smoked paprika, cayenne pepper, sugar) and stir in pineapple juice, lime juice, olive oil, and soy sauce. Pour over fajita meat.  Allow to marinate for 2-4 hours in refrigerator.

Place piece of foil in air fryer basket; place peppers/onions in basket.  Spray with olive oil, sprinkle with salt/pepper.

Close.  Cook on 400° for 10 minutes.  After 10 minutes, add fajita meat on top of vegetables.  Close.  Cook on 400° for 7 minutes or until steak is cooked to your liking.

Serve on tortillas.  Top with toppings of choice – cheese, cilantro, sour cream, salsa, green onion, etc.
