John's Farm Ground Beef And Butternut Winter Soup


2# John's Farm Organic Ground Beef

2-3 C Butternut Squash, peeled and diced

1/2 - 1 C heavy whipping cream

1 T Olive Oil

1/4 t Coriander

1/4 t Ground All-Spice

3 cloves garlic, crushed

2 celery stalks, diced

1/2 medium onion, diced

1 bell pepper, seeded/diced

1 T Chili Powder

2 – 14 ½ oz petite diced tomatoes

1/2 T Black Pepper

1 T Ground Ginger

1 ½ T honey

1/2 C green chilies

1 T dried Parsley

1 ½ - 2 C bone broth

Salt, as desired


Heat oil in skillet, saute’ onion and garlic until translucent. Add spices and stir until well blended, approx. 1 minute. Remove from skillet. Brown ground beef in skillet. Place browned ground beef in cooking pot. Add spice mixture and all other ingredients, except cream. Cover and bring to boil, then reduce heat to simmer for approx. 1 hour (or until squash is tender), stir as needed. Remove from heat; gently add cream, stirring constantly. Serve and garnish as desired with sour cream, green onion, shredded cheese, chopped jalapeno.
