beef in the cream

INGREDIENTS

2 lbs. John's Farm Organic Beef - roast, k-bob chunks, stew meat (cut is your choice)

2 cloves garlic, minced

1 C Beef Broth

3/4 C Red Wine (I prefer a red fruit wine such as raspberry)

1 lb Sliced Mushrooms

3 T butter

1/4 t. Salt

1/4 t. black pepper

3 T Olive Oil

1 large onion, sliced

1 T flour

1 t. Behind the Barn All-Purpose Seasoning, fine grind.

1 t. dried parsley

1 C heavy cream

1/4 – 1/3 C water

 

DIRECTIONS

Directions vary depending on type of cooking – crock pot or oven. Oven is best for k-bob, and stew meat. Crock pot is best for roast.

Directions for oven: Place foil across sheet-cake pan allowing it to hang over on all sides. In skillet add olive oil, heat skillet and add beef, brown for 2-3 minutes. Remove beef from pan. Place browned beef on foil; sprinkle with all-purpose seasoning. Place sliced onion in browing pan, add more olive oil if needed, saute’ until onion is tender. Add minced garlic to pan, sauté’ a few minutes more, stirring as needed. Spoon onion/garlic/oil on top of beef. Place another piece of foil over top and secure all sides of foil by folding together to form loose pouch around steak. Bake at 275° for two-three hours, beef should be fork tender.

Directions for crock pot: Brown meat in skillet with olive oil. Place 1/2 C beef broth in crock pot; add browned beef. Sauté onions and garlic in skillet with meat drippings along with additional olive oil; spoon sautéed onions/garlic on top of beef in crock pot. Cooking time will vary depending on size of roast 

(approx. 6-7 hours on low for 3-4lb roast

Sauce directions: Sauté sliced mushrooms in butter, 3-5 min until tender, stirring occasionally, using same skillet as used to brown meat. Add red wine, 1/2 C beef broth, salt, pepper and blend well. Add cream. In jar, mix water with flour, shake well to make smooth paste. Stir paste slowly into mushroom mixture, stirring constantly, and continue to stir until sauce thickens slightly. To serve, cut meat into chucks or slice or fork separate. Spoon sauce over beef when serving or place beef in sauce prior to serving. Serve over mashed potatoes or wild/brown rice blend.

Options: Omit onions or omit mushrooms (not both) as desired for personal taste. Thicken to personal liking. Add more pepper as desired.
