1/2 C Olive Oil
1/3 C Soy Sauce
4 scallions, washed and cut in ½
2 large cloves garlic
1/4 C lime juice
1/2 t red pepper flakes
1/2 t ground cumin
3 T dark brown sugar
2 lbs John's Farm Organic Skirt Steak – cut into 3 equal pieces
In blender, put oil, soy sauce, scallions, garlic, lime juice, red pepper, cumin, and sugar and puree. In large, heavy zip top bag place skirt steak pieces and pour in marinade. Seal bag by removing as much air as possible. Marinade 1 hour minimum, up to 24 hours.
Remove steak from bag, pat dry with paper towels. Heat griddle/grill/skillet to hot. While surface is heating make 3 double-thick layers of aluminum foil, each large enough to wrap around cooked skirt steak.
Place one piece of skirt steak on hot surface for 1 minute per side. When finished cooking, place meat in double thickness of aluminum foil, wrap tightly, let sit for 15 minutes.
